Cod with Lemon
17/11/2023Lemon cod is a light and tasty dish, perfect for a balanced meal and representative of the Italian cuisine that loves to enhance the flavor of ingredients without covering them. Here’s how to prepare it:
Ingredients
- 4 cod fillets (about 150-200 grams each)
- 1 organic lemon
- Flour, as needed for dusting the fish
- 2 tablespoons of extra virgin olive oil
- Salt and pepper, as needed
- Fresh parsley, chopped for garnish
Preparation
- Dry the cod fillets well with kitchen paper and lightly dust them with flour on both sides.
- Grate the lemon zest, taking care not to grate the bitter white part, and squeeze the juice.
- Heat the extra virgin olive oil in a non-stick frying pan over medium-high heat.
- Once the oil is hot, lay the floured cod fillets in and cook for about 2-3 minutes per side, until they are golden brown.
- Lower the heat, season with salt and pepper to taste, and add the lemon juice to the pan.
- Cook for another 2 minutes, turning the fillets just once to season them evenly.
- Serve the cod fillets on a serving dish, sprinkling with the grated lemon zest and fresh chopped parsley for garnish.
Curiosity
Did you know that cod is a very versatile fish and present in many traditional Italian recipes? For example, in the South, it is often found in fish soups, while in the North it is prepared “in bianco” with herbs.
I suggest pairing the lemon cod with a simple green salad or steamed vegetables to keep the dish light and balanced. Enjoy your meal!
