Ingredients
- 200 g of all-purpose flour
- 150 g of granulated sugar
- 100 g of soft butter
- 3 eggs
- Grated zest of 2 untreated lemons
- Juice of 1 lemon
- 1 packet of baking powder
- 1 pinch of salt
- Icing sugar (for decoration)
Preparation
- Preheat the oven to 180 °C and butter and flour a cake pan about 22 cm in diameter.
- In a bowl, cream the soft butter with the granulated sugar until the mixture is fluffy and light.
- Add the eggs one at a time, continuing to beat after each addition until they are fully incorporated into the mixture.
- Mix in the grated lemon zest and then the lemon juice, stirring well.
- Sift the flour with the baking powder and a pinch of salt, then add it to the wet mixture spoon by spoon, mixing gently with a spatula or a wooden spoon to avoid forming lumps.
- Pour the batter into the prepared pan and smooth the surface with the back of a spoon.
- Bake the cake for about 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Take the cake out of the oven and let it cool in the pan for a few minutes before unmolding it onto a wire rack.
- Once cooled, dust it with icing sugar before serving.
