Lemon Ciambellone

The Lemon Ciambellone is a classic Italian cake perfect for breakfast or snack time. Here is the recipe to prepare it.

Ingredients

  • 300 g of all-purpose flour
  • 250 g of granulated sugar
  • 100 ml of vegetable oil
  • 120 ml of milk
  • 3 eggs
  • Grated zest of 2 untreated lemons
  • Juice of 1 lemon
  • 1 packet of baking powder
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, whisk the eggs with the sugar until you obtain a light and fluffy mixture.
  3. Slowly add the oil, continuing to stir.
  4. Incorporate the grated lemon zest and lemon juice into the mixture.
  5. Sift the flour with the baking powder and salt and gradually add it to the mixture, alternating with the milk, mixing well to avoid lumps.
  6. Pour the batter into a previously buttered and floured bundt pan (angel cake pan).
  7. Bake for about 40 minutes or until a toothpick inserted in the center of the ciambellone comes out clean.
  8. Remove the ciambellone from the oven and let it cool before unmolding.

A curious fact about the ciambellone is that in many Italian homes it is a breakfast staple, often accompanied by a good coffee or a glass of warm milk. The addition of lemon not only perfumes the dough, but gives a pleasant note of freshness that makes it ideal for any season.
