Lemon Brownies

Ingredients
- 200 g of sugar
- 120 g of flour
- 120 g of unsalted butter, melted and cooled
- 2 large eggs

- 1/2 teaspoon of baking powder
For the lemon icing:
- 150 g of icing sugar
- 3 tablespoons of fresh lemon juice
- Grated zest of 1 lemon (optional, for decoration)
Preparation
- Preheat the oven to 180 °C. Line a 20 cm square baking pan with parchment paper, letting it overhang the sides to make it easier to remove the brownies later.
- In a large bowl, mix the sugar, flour, salt, and baking powder.
- To the dry ingredients mix, add the eggs, melted butter, lemon zest, and juice. Mix until you have a homogeneous batter.
- Pour the batter into the prepared pan, leveling the surface with a spatula.
- Bake in the preheated oven for about 20-25 minutes, or until the edges start to slightly golden and a toothpick inserted in the center comes out clean.
- Let the brownies cool completely in the pan on a wire rack.
For the icing:
- While the brownies are cooling, combine the icing sugar and lemon juice in a bowl, stirring until you have a smooth glaze.
- Spread the glaze over the cooled brownies and sprinkle with the grated lemon zest to decorate, if you wish.
- Let the glaze harden, then lift the brownies from the pan using the parchment paper. Cut into squares and serve.
