Lemon Biscuits

Ingredients

  • 220g of 00 flour
  • 120g of granulated sugar
  • 100g of butter at room temperature
  • 1 large egg
  • The grated zest of 1 lemon (organic, if possible)
  • 1 pinch of salt
  • 1 teaspoon of baking powder
  • Icing sugar (for garnish, optional)

Preparation

  1. In a bowl, mix the soft butter with the granulated sugar until you have a creamy and uniform mixture.
  2. Add the egg and continue mixing until well amalgamated.
  3. Incorporate the grated lemon zest and a pinch of salt to enhance the flavors.
  4. Gradually add the sieved flour with the baking powder, and work the dough until it is smooth and uniform.
  5. Form a ball with the dough and wrap it in cling film. Let it rest in the refrigerator for about 30 minutes.
  6. Preheat the oven to 180 °C.
  7. Remove the dough from the fridge and, on a lightly floured surface, roll it out to a thickness of about half a centimeter.
  8. Use a cookie cutter to cut out the biscuits in the desired shape and arrange them on a baking sheet lined with parchment paper.
  9. Bake the biscuits for about 10-12 minutes or until slightly golden.
  10. Remove the biscuits from the oven and let them cool on a wire rack.
  11. Once cooled, you can sprinkle them with icing sugar for a sweet and refined garnish.

Lemon biscuits are delicious both soft and crispy, so the cooking time can vary according to personal preferences.
