Lemon and Strawberry Cake

Ingredients

  • 200 g of all-purpose flour
  • 150 g of granulated sugar
  • 100 g of soft butter
  • 3 eggs
  • Grated zest of 1 organic lemon
  • Juice of 1 lemon
  • 1 sachet of baking powder
  • A pinch of salt
  • 250 g of fresh strawberries
  • Icing sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. In a bowl, whip the soft butter with the sugar until the mixture is frothy.
  3. Add the eggs, one at a time, incorporating them well into the mixture.
  4. Add the grated zest of the lemon and the juice, and mix well.
  5. Sift the flour, baking powder, and salt, and add them a little at a time to the mixture, stirring gently until you get a homogeneous compound.
  6. Wash the strawberries, remove the stem and cut them into pieces (leave some whole for decorating the cake).
  7. Fold the strawberry pieces into the mixture and mix carefully.
  8. Butter and flour a cake pan, pour in the mixture, and level the surface.
  9. Bake in the oven for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  10. Let the cake cool, then unmold it and decorate the surface with the whole strawberries you had set aside and sprinkle with icing sugar.
