Ingredients
- 200 g of all-purpose flour
- 150 g of granulated sugar
- 100 g of soft butter
- 3 eggs
- Grated zest of 1 organic lemon
- Juice of 1 lemon
- 1 sachet of baking powder
- A pinch of salt
- 250 g of fresh strawberries
- Icing sugar (for decoration)
Preparation
- Preheat the oven to 180 °C (350 °F).
- In a bowl, whip the soft butter with the sugar until the mixture is frothy.
- Add the eggs, one at a time, incorporating them well into the mixture.
- Add the grated zest of the lemon and the juice, and mix well.
- Sift the flour, baking powder, and salt, and add them a little at a time to the mixture, stirring gently until you get a homogeneous compound.
- Wash the strawberries, remove the stem and cut them into pieces (leave some whole for decorating the cake).
- Fold the strawberry pieces into the mixture and mix carefully.
- Butter and flour a cake pan, pour in the mixture, and level the surface.
- Bake in the oven for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool, then unmold it and decorate the surface with the whole strawberries you had set aside and sprinkle with icing sugar.
