Ridged Spaghetti with Lemon and Shrimp

Ingredients
- 320 g of ridged spaghetti
- 300 g of fresh or frozen shrimp
- 1 organic lemon (zest grated and juice)
- 2 cloves of garlic
- Fresh parsley to taste
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- 1 glass of white wine (optional)
Preparation
- If the shrimp are frozen, defrost them beforehand. Clean the shrimp by removing the head, shell, and intestinal tract. Set aside.
- Bring a pot of salted water to a boil and cook the ridged spaghetti until al dente, following the instructions on the package.
- Meanwhile, in a wide pan, sauté the finely chopped garlic cloves in plenty of extra virgin olive oil. When the garlic is golden, remove it from the pan.
- Add the shrimp to the pan and let them sauté briefly. If you wish, deglaze with a glass of white wine and let the alcohol evaporate.
- Add the grated lemon zest and stir well to flavor the shrimp.
- Drain the ridged spaghetti, reserving some cooking water. Transfer them to the pan with the shrimp.
- Add the lemon juice and a few tablespoons of the cooking water to create a creamy sauce. Season with salt and add a generous grinding of black pepper.
- Toss everything together for a few minutes until the ingredients are well combined and the pasta is well seasoned.
- Turn off the heat and add the freshly chopped parsley.
Serve the ridged spaghetti with lemon and shrimp hot, finishing the dish with a drizzle of raw olive oil and, if you like, an additional sprinkle of grated lemon zest.
