Legume Pasta with Potato and Mushroom Sauce
17/11/2023Legume pasta is an excellent choice for those looking for a protein-rich and gluten-free alternative to traditional wheat pasta. Pairing it with a mushroom and potato sauce makes for a comforting and nutritious dish. Here is the recipe:
Ingredients
- 250 g of legume pasta (e.g., penne or fusilli)
- 300 g of potatoes, peeled and diced
- 250 g of mushrooms (button, porcini, or mixed) cleaned and sliced
- 1 small onion, finely chopped
- 2 cloves of garlic, chopped
- 500 ml of vegetable broth
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley chopped, for garnish
- (Optional) grated Parmesan cheese, for serving
Preparation

In a large pan, heat the extra virgin olive oil and sauté the chopped onion until it becomes translucent. Add the garlic and let it brown for a minute, being careful not to burn it.

Add the sliced mushrooms to the pan and let them cook until they have released all their water and begun to brown.

While the mushrooms are cooking, boil the potatoes in salted water until tender, then drain them.

Once the mushrooms are golden, add the boiled potatoes to the sauté. Deglaze with a bit of vegetable broth if needed to prevent the sauté from sticking.

Prepare the legume pasta following the instructions on the package, being careful not to overcook it to maintain an al dente texture.

When the pasta is ready, drain it and add it to the sautéed potatoes and mushrooms, stirring gently. Add the vegetable broth a little at a time to create a light sauce that coats the pasta.

Let it flavor for a few minutes, adjust salt and pepper, and if desired, add chopped fresh parsley.

Serve hot, with a sprinkling of Parmesan cheese if desired.
