Leek, Salmon, and Robiola Bundles

Ingredients

  • Puff pastry or shortcrust pastry sheets
  • Leeks
  • Smoked salmon
  • Robiola or other creamy cheese
  • Butter
  • Salt, pepper
  • An egg (for brushing)

Preparation

  1. Begin by thoroughly cleaning the leeks and slicing them into rings or strips. Sauté the leeks in a pan with some butter, salt, and pepper until they are soft and slightly golden.

  2. Roll out the puff pastry or shortcrust pastry and cut into squares of about 10 cm on each side.

  3. On each square, place a tablespoon of sautéed leeks, a slice of smoked salmon, and a tablespoon of robiola.

  4. Close the squares of pastry to form a bundle, making sure to seal the edges by pressing them together or using the tines of a fork.

  5. Beat the egg in a small bowl and brush each bundle with the beaten egg to give shine and promote browning.

  6. Bake the bundles in a preheated oven at 200 °C for about 15-20 minutes, or until the pastry is golden and crisp.

  7. Serve the bundles hot, perhaps accompanied by a fresh green salad.

These bundles are suitable as both an appetizer and a main course. Additionally, for an even more Italian touch, you can add a sprinkle of Parmigiano-Reggiano inside or replace the robiola with a soft cheese like stracchino. Enjoy your meal!
