Gnocchi with Leek and Shrimp

Ingredients
- 500 g of potato gnocchi
- 200 g of shrimp, shelled and cleaned
- 1 large leek, sliced into rings
- 2 cloves of garlic, minced
- 100 ml of white wine
- 200 ml of cooking cream
- Extra virgin olive oil as needed
- Salt and pepper as needed
- Chopped fresh parsley for garnish
Preparation
- Start by washing and slicing the leek into rings. Set aside.
- Clean the shrimp by removing the head, shell, and intestine. Wash and dry them.
- In a large pan, sauté the minced garlic with a drizzle of extra virgin olive oil. Once the garlic is golden, add the leek and cook until it becomes soft and translucent.
- Add the shrimp to the pan and sauté for a couple of minutes.
- Deglaze with white wine and allow the alcohol to evaporate.
- Lower the heat and add the cooking cream. Mix well and cook for a few minutes, until the sauce has slightly thickened. Adjust the seasoning with salt and pepper.
- Meanwhile, cook the gnocchi in plenty of salted water following the instructions on the package. Use a skimmer to take them out as soon as they float to the surface.
- Transfer the gnocchi directly into the pan with the leek and shrimp sauce. Gently mix to flavor the gnocchi.
- Serve immediately, garnished with chopped fresh parsley.
