Lean Ravioli with Butter and Sage

Here is the recipe for Lean Ravioli with Butter and Sage. Lean ravioli is a dish from the Italian tradition, especially during Lent or when following a vegetarian diet. It is a simple dish yet full of flavor, where the fragrance of butter and the aroma of sage perfectly marry the delicate filling of the ravioli.

Ingredients

  • For the pasta:
    • 200 g of soft wheat flour
    • 2 eggs
  • For the filling:
    • 250 g of ricotta cheese
    • 50 g of grated Parmesan cheese
    • Nutmeg, to taste
    • Salt and pepper, to taste
  • To season:
    • Butter, to taste (about 80 g)
    • Fresh sage leaves
    • grated Parmesan cheese, to sprinkle

Preparation

  1. To prepare the pasta, pour the flour in a pile on the work surface, add the eggs in the middle and start working the ingredients until you obtain a smooth and elastic dough. Let it rest wrapped in cling film for about 30 minutes.
  2. In the meantime, prepare the filling by blending the ricotta with the Parmesan, add a grating of nutmeg, and adjust with salt and pepper.
  3. Resume the dough and roll it out with a rolling pin or pasta machine to obtain thin sheets.
  4. Place small amounts of the filling on the sheet, spaced apart. Cover with another sheet of pasta and with the help of a pastry wheel or ravioli cutter, shape the ravioli sealing the edges well.
  5. Cook the ravioli in abundant salted water for about 4-5 minutes, being careful not to break them.
  6. In a large pan, melt the butter and add the sage leaves. When the ravioli are ready, drain them with a slotted spoon and transfer them into the pan with the butter and sage, flavoring them for a minute.
  7. Plate the ravioli and sprinkle with grated Parmesan cheese before serving.
