Layered Cream Cake
17/11/2023I can show you how to prepare a layered cream cake, with an Italian touch in the choice of ingredients to make it a bit more special.
Ingredients
For the cake base:
- 250 g of type “00” flour
- 200 g of caster sugar
- 4 large eggs
- 120 ml of whole milk
- 100 ml of vegetable oil
- 16 g of baking powder
- A pinch of salt
- Grated zest of 1 lemon (for an Italian touch)
For the filling:
- 500 g of mascarpone (typical sweet Italian cheese)
- 100 g of powdered sugar
- 300 ml of whipping cream
- Natural vanilla flavor
For the syrup:
- 100 ml of water
- 50 g of sugar
- A small glass of orange liqueur (for example, Grand Marnier or a very Italian touch with Limoncello if you prefer)
Garnish:
- Fresh fruit at your choice (strawberries, raspberries, or berries for a touch of color)
- Powdered sugar for dusting
Preparation
- Preheat the oven to 180 °C and butter and flour two round cake pans of the same diameter.
- Prepare the cake base by whipping the eggs with the sugar until the mixture is frothy and light. Fold in the oil and milk, alternating with the sifted flour, baking powder, salt, and lemon zest.
- Divide the mixture evenly between the two pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- In the meantime, prepare the filling by mixing the mascarpone with the powdered sugar and vanilla. In another bowl, whip the cream and then gently fold it into the mascarpone mixture.
- Prepare the syrup by dissolving the sugar in the hot water and adding the selected liquor.
- Once ready, remove the cake bases from the oven and let them cool completely.
- Cut the cakes horizontally into halves to get four layers.
- Start assembling the cake with a base layer, moisten with the prepared syrup, and spread a layer of the mascarpone cream on top.
- Continue by alternating the cake layers with the cream until you finish with the last cake layer.
- Cover the entire cake with an extra layer of cream and decorate with fresh fruit and powdered sugar.
