Lasagne with Zucchini, Confit Tomatoes and Sausage

Lasagne with zucchini, confit tomatoes, and sausage is a succulent dish that combines the tradition of baked pasta with the freshness of vegetables and the intense flavor of sausage. Let’s see how to prepare it:

Ingredients

  • 250 g of egg lasagna sheets (you can also use those that don’t require pre-cooking)
  • 3 medium zucchinis
  • 500 g of fresh sausage
  • 200 g of confit tomatoes (or sun-dried tomatoes in oil, if you can’t find them)
  • 250 g of mozzarella cheese
  • 100 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Fresh basil (for garnish)

For the béchamel sauce:

  • 50 g of butter
  • 50 g of flour
  • 500 ml of milk
  • Salt
  • Nutmeg

Preparation

  1. Start by preparing the béchamel sauce. Melt the butter in a saucepan, stir in the flour with a whisk and cook for a couple of minutes. Gradually add the hot milk while stirring to avoid lumps. Season with salt and nutmeg and cook over medium heat until the béchamel thickens. Set it aside.

  2. Cut the zucchinis into thin rounds and quick sauté them in a pan with a drizzle of oil, salt, and pepper until lightly golden.

  3. Remove the casings from the sausage, crumble it, and brown it in a pan with a little oil until it’s well cooked and crispy.

  4. Slice the confit tomatoes and mozzarella, and grate the Parmesan if you haven’t already done so.

  5. Begin assembling the lasagna in a greased baking dish with a little oil. Lay down a first layer of béchamel, then add a layer of lasagna sheets, more béchamel, zucchini, sausage, confit tomatoes, and mozzarella. Sprinkle with Parmesan and repeat the layers until all the ingredients are used up, ending with béchamel, Parmesan, and some mozzarella on top.

  6. Bake in a preheated oven at 180 °C for about 30 minutes or until the desired browning is achieved.

  7. Let it rest for 10 minutes before serving and garnish with fresh basil leaves.
