Lasagna with white ragù and vegetables

Lasagna with white ragù and vegetables is a great variation on the more classic lasagna with red ragù. By using seasonal vegetables, you can achieve a tasty and lighter dish. Here is the recipe for preparing this delicious casserole.

Ingredients

  • 250 g of fresh lasagna sheets (or dried ones that do not require pre-cooking)
  • 300 g of minced meat (you can choose beef, pork, or a mix of the two)
  • 1 carrot
  • 1 stick of celery
  • 1 white onion
  • 200 g of champignon mushrooms
  • 1 zucchini
  • 1 red bell pepper
  • 50 g of butter
  • 500 ml of béchamel sauce
  • 100 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper
  • Nutmeg

Preparation

  1. To start, prepare the sofrito by finely chopping the carrot, celery, and onion and sautéing them in a pan with a drizzle of extra virgin olive oil.
  2. Add the minced meat and cook until it is golden, stirring frequently.
  3. In the meantime, clean and cut the vegetables (mushrooms, zucchini and bell pepper) into small, uniform cubes.
  4. When the meat is well browned, add the vegetables to the pan and cook for about 10 minutes. Season with salt and pepper, and if you like, you can also add a pinch of nutmeg.
  5. Prepare the béchamel sauce by melting butter in a pot, adding the flour and then gradually pouring in the hot milk. Cook stirring until it thickens, then season with salt, pepper, and a grating of nutmeg.
  6. Take a baking dish and start layering the lasagna: a first layer of béchamel, then place the lasagna sheets on top, then add the white ragù with vegetables and sprinkle with grated Parmesan.
  7. Continue overlapping the layers until all the ingredients are used up, finishing with béchamel and a generous dusting of Parmesan.
  8. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the surface is beautifully golden and crispy.
  9. Let the lasagna rest for about 10 minutes before serving.
