Lasagne with Vegetable Confetti

I can guide you in preparing the lasagna with vegetable confetti, a colorful and healthy variation of the classic Italian dish. Here is the recipe:

Ingredients

For the lasagna:

  • 250 g of egg lasagna noodles (preferably fresh)
  • 200 g of ricotta cheese
  • 150 g of grated mozzarella cheese

For the vegetable confetti:

  • 2 zucchinis
  • 2 carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small eggplant
  • 100 g of fresh spinach

For the béchamel sauce:

  • 50 g of butter
  • 50 g of flour
  • 500 ml of milk
  • Salt and pepper to taste
  • Nutmeg to taste

Preparation

  1. Begin by preparing the “confetti” of vegetables. Wash all the vegetables. Cut the zucchinis, carrots, bell peppers, and eggplant into small cubes (brunoise). Cook the spinach in a pan with a bit of oil and garlic until wilted, then chop coarsely.

  2. In a wide pan, lightly sauté the cubed vegetables with a drizzle of olive oil, salt, and pepper for a few minutes, until they are tender yet still crisp. Set them aside to cool.

  3. Now prepare the béchamel sauce. Melt the butter in a saucepan, add the flour, and mix well to avoid lumps. Cook for a minute and then slowly start adding the warm milk, continuing to stir. Bring to a boil until the béchamel sauce thickens. Add salt, pepper, and a generous grating of nutmeg.

  4. Take a baking dish and begin to assemble the lasagna. Spread a layer of béchamel sauce on the bottom, followed by a layer of lasagna noodles. Spread some of the ricotta, sautéed vegetables, and grated mozzarella on top.

  5. Continue with the layers until all ingredients are used up, ending with béchamel and mozzarella.

  6. Bake in a preheated oven at 180 °C for about 30 minutes, or until the surface is golden brown and the lasagna is cooked to perfection.

Curiosity

The “vegetable confetti” are not just a touch of color to the dish, but also represent a tasty and imaginative way to increase the intake of vegetables in the diet, making the dish lighter and more digestible compared to traditional lasagna. Remember that you can customize the vegetables according to the season or your personal preferences.
