Ingredients
- 300 g of egg lasagna (preferably fresh)
- 500 g of flat green beans
- 400 g of peeled tomatoes
- 200 g of ground beef
- 100 g of diced pancetta
- 1 medium onion
- 1 carrot
- 1 stick of celery
- 150 g of grated Parmesan cheese
- 500 ml of béchamel sauce
- Extra virgin olive oil
- Salt and pepper to taste
- Nutmeg to taste
Preparation
- First, thoroughly clean the flat green beans, removing the ends and the side strings, then cut them into pieces of about 2 cm.
- Blanch them in salted water for about 10 minutes, then drain and set aside.
- In the meantime, prepare a sauté with onion, carrot, and celery chopped finely. Add the oil in a large frying pan and brown the mixture.
- Add the diced pancetta to the sauté and let it brown.
- Add the ground beef to the sauté, cooking until it’s well browned, crumbling it with a wooden spoon.
- Add the peeled tomatoes, crushing them with the spoon. Cook for about 20 minutes, then add the flat beans. Season with salt and pepper and let everything flavor together for another 10 minutes.
- Prepare the béchamel in a separate pot. Heat the milk and in a separate saucepan melt the butter, add the flour stirring with a whisk to avoid lumps, then pour the hot milk continuing to stir until obtaining a smooth and homogeneous cream. Add a sprinkle of nutmeg, salt, and pepper to taste.
- Preheat the oven to 180 °C.
- Assemble the lasagna in a baking dish, starting with a layer of béchamel on the bottom, then a layer of lasagna, some of the flat bean ragù, a sprinkle of Parmesan and some béchamel. Repeat the layers until all the ingredients are used up, finishing with béchamel and Parmesan.
- Bake the lasagna for about 30-40 minutes or until the surface is golden brown and crispy.
Let it rest for a few minutes before serving. This variation offers a touch of originality and a delicious flavor, making the lasagna even more interesting from a taste perspective.
