Strudel lasagna

“Strudel Lasagna” is not a traditional dish in either Italian cuisine or Austrian cuisine, where the strudel originates from, but that doesn’t mean we can’t have fun merging two culinary specialties into one creative recipe! The idea is to prepare a version of lasagna with a filling inspired by the typical ingredients of apple strudel. Here is how we could proceed:

Ingredients

  • 9-12 sheets of lasagna pasta (pre-cooked or oven-ready)
  • 3 apples (such as Fuji or Renette), peeled and diced
  • 100 g of sultana raisins
  • 50 g of pine nuts
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of grated nutmeg
  • 100 g of granulated sugar
  • 50 g of butter
  • 250 g of ricotta cheese
  • 200 ml of cream
  • Powdered sugar for dusting (optional)
  • Salt to taste

Preparation

  1. Preheat the oven to 180°C (356°F). If you are using oven-ready lasagna sheets, you don’t need to precook them. Otherwise, boil them in salted water until al dente, then quickly cool them under cold running water and lay them out on a clean kitchen towel to dry.

  2. In a pan, melt the butter and add the diced apples. Cook for about 5 minutes until they start to soften.

  3. Add the sugar, cinnamon, nutmeg, and mix well. Incorporate the raisins and pine nuts and cook the mixture for another 5 minutes. Let it cool down.

  4. In a bowl, mix the ricotta with the cream until you obtain a smooth and homogeneous cream. Add a pinch of salt.

  5. In a baking dish, distribute a thin layer of ricotta cream, followed by a lasagna sheet. On top of the sheet, add a layer of the apple mixture, then another layer of ricotta cream. Continue in this manner until you run out of ingredients, finishing with a final layer of pasta and ricotta cream.

  6. Cover the dish with parchment paper and bake in the oven for about 40-45 minutes. Remove the parchment paper in the last 10 minutes to brown the surface.

  7. Let the strudel lasagna rest for about 10-15 minutes before serving. If you wish, you can dust with powdered sugar before bringing it to the table.

Strudel is a dessert made of puff pastry filled, usually, with apples and cinnamon, very popular in Austria and southern Germany. With this recipe, we have taken inspiration from the sweetness and spiciness of the strudel to create an unusual dish that mixes sweet and savory flavors in a slightly different format than usual. You could also add a sprinkle of grated cheese before baking if you prefer a touch closer to the classic Italian lasagna flavor.
