Sausage Ragù Lasagna Roses

Ingredients

  • 10 sheets of fresh lasagna
  • 400 g of sausage
  • 700 ml of tomato purée
  • 1 carrot
  • 1 rib of celery
  • 1 onion
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 250 g of ricotta cheese
  • 100 g of grated Parmesan cheese
  • Diced mozzarella, to taste
  • Fresh basil
  • 1/2 glass of red wine
  • Butter to taste, for the baking dish

Preparation

  1. Start by cleaning and finely chopping the carrot, celery, and onion to prepare the soffritto. Place the chopped vegetables in a pan with a drizzle of oil and let them gently fry until they are soft and golden.
  2. Remove the skin from the sausage, crumble it and add it to the soffritto. Let it brown until the sausage is well golden. At this point, deglaze with red wine and let it evaporate.
  3. Add the tomato purée, adjust the salt and pepper, and let it simmer on low heat for at least 30 minutes, until the ragù has thickened and become flavorful.
  4. In the meantime, bring a pot of salted water to a boil. Blanch the lasagna sheets a few at a time for a few minutes, then lay them out on a clean cloth to cool and dry.
  5. In a bowl, mix the ricotta with the grated Parmesan, a pinch of salt, pepper, and some finely chopped basil leaves.
  6. Take a sheet of lasagna and spread a tablespoon of the ricotta mixture on it, then add some sausage ragù and a few cubes of mozzarella.
  7. Roll the lasagna sheet up on itself, forming a “rose”, and place each rose standing up in a previously buttered baking dish.
  8. Continue in this manner until all the ingredients are used, positioning the roses close to each other.
  9. Bake at 180 °C for about 20-25 minutes or until you see that the cheese has melted and the surface of the lasagna roses starts to turn golden brown lightly.
  10. Let it rest for a few minutes before serving.
