Krumiri-style Biscuits

Krumiri are traditional Piedmontese biscuits, especially known for their characteristic slightly curved stick shape. Below you will find a recipe to prepare biscuits similar to Krumiri.

Ingredients

  • 150 g of soft butter
  • 150 g of sugar
  • 1 whole egg + 1 yolk
  • Grated zest of half a lemon
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract
  • 300 g of type 00 flour
  • 50 g of potato starch
  • 1 teaspoon of baking powder for sweets

Preparation

  1. In a large bowl, cream the soft butter with the sugar until you get a frothy and light mixture.
  2. Add the whole egg, the yolk and continue to mix.
  3. Incorporate the grated lemon zest, the pinch of salt, and the vanilla extract, mixing the ingredients evenly.
  4. Combine the sifted flour, potato starch, and baking powder, blending everything to form a smooth dough.
  5. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
  6. Prepare a baking tray lined with parchment paper.
  7. Take small portions of dough, form slightly curved sticks and place them on the tray.
  8. Preheat the oven to 180 °C.
  9. Bake the biscuits for about 10-15 minutes or until they are golden.
  10. Take the Krumiri out of the oven and let them cool on a wire rack before serving.

Fun Facts

Krumiri take their name from the “Krumm” liqueur, in honor of Victor Emmanuel II. These biscuits have become famous not only for their flavor but also for their unique shape, which seems to resemble the former sovereign’s mustaches. Originally produced in Casale Monferrato, Krumiri are often served with a shot of liqueur or sweet wine, following the Piedmontese tradition.
