Kiwi Salad

Kiwi salad is a fresh dish, simple to prepare and very versatile. Here is a simple version that we can later Italianize with a Mediterranean touch.

Ingredients

  • 4 ripe but firm kiwis
  • 1 tablespoon of honey
  • The juice of 1 lemon
  • A handful of hazelnuts or almonds, to your choice
  • Fresh mint for garnishing (optional)

Preparation

  1. Peel the kiwis and slice them into rounds or cubes, according to your preference.
  2. In a bowl, mix the lemon juice with the honey until they become an emulsion.
  3. Add the kiwi to the bowl and gently mix to dress the fruit with the lemon and honey emulsion.
  4. Lightly toast the hazelnuts or almonds in a pan without adding oil, then let them cool and roughly chop them.
  5. Add the chopped hazelnuts or almonds to the kiwi salad.
  6. Garnish with fresh mint leaves if you wish for an extra touch of freshness.

To add an Italian touch to the recipe, we might include some fresh cheese such as buffalo mozzarella or burrata in small pieces, which with the sweet-and-sour of the kiwi creates a delicious contrast in flavors.

Curiosity

The kiwi is not only delicious but also very rich in vitamin C and fibers. It is native to China but is mostly associated with New Zealand, which began to cultivate it on a large scale and spread it all over the world. The name “kiwi” is indeed a tribute to the country’s symbolic and affable bird.
