Chicken Rolls

Chicken rolls are a tasty and versatile dish that can be prepared in different ways. Here is a basic Italian recipe for chicken rolls.

Ingredients

  • 4 chicken breasts, cut into thin slices
  • 4 slices of Parma ham
  • 4 slices of cheese (for example, scamorza or fontina)
  • Fresh sage
  • Extra virgin olive oil
  • Salt and pepper to taste
  • White wine for deglazing
  • Cooking twine

Preparation

  1. Flatten the chicken breast slices with a meat mallet to achieve a uniform thickness. Do this step between two sheets of plastic wrap to avoid splashes and to keep the meat as intact as possible.
  2. Season the chicken slices with salt and pepper on both sides.
  3. On each slice of chicken, lay a slice of Parma ham and one of cheese, then place 1-2 sage leaves.
  4. Roll up the chicken slices to form the rolls, making sure to seal them well so that the filling stays inside during cooking. If necessary, secure them with cooking twine or toothpicks.
  5. Heat some extra virgin olive oil in a pan and brown the rolls on all sides until they are well golden.
  6. Deglaze with white wine, allowing the alcohol to evaporate.
  7. Cover with a lid and continue cooking over medium-low heat for about 15-20 minutes, turning the rolls occasionally.
  8. Remove the rolls from the pan and cut the twine before serving.

Chicken rolls can be served with a side of vegetables or a nice fresh salad. For a richer version, you can add ingredients to the filling, such as sautéed spinach or asparagus.

Curiosity

The rolls can be prepared with numerous fillings and often in Italy, we find them with the addition of regional ingredients, such as porcini mushrooms in Tuscany or eggplants in Sicily. It’s a very versatile dish that lends itself to many variations.
