Ice Cream on a Stick

Here’s how to prepare delicious ice cream on a stick, with a little note of Italian flair. This is a basic recipe, but then I’ll tell you how to personalize it in an Italian style.

Ingredients

  • 500 ml of fresh cream for sweets
  • 250 ml of condensed milk
  • 1 teaspoon of vanilla extract (optional)
  • Fruit of choice (e.g.: strawberries, raspberries, bananas, kiwi)
  • Chocolate chips, chopped hazelnuts, or other ingredients to enrich (optional)
  • Ice cream stick molds

Preparation

  1. In a large bowl, mix the fresh cream with the condensed milk until you get a smooth mixture. If desired, add vanilla extract for flavoring.
  2. Cut the chosen fruit into small pieces and add it to the mixture, along with any other ingredients like chocolate chips or chopped hazelnuts.
  3. Pour the mixture into ice cream stick molds, leaving a little space at the top to allow the ice cream to expand during freezing.
  4. Place a wooden stick in the center of each mold.
  5. Freeze for at least 4 hours or until the ice creams are completely solid.

To add an Italian touch, you can incorporate typical ingredients into your ice cream such as IGP Piedmont hazelnut, Bronte pistachio, or you can make a tiramisu variant, adding cooled espresso coffee and pieces of ladyfingers to the basic mixture.

Curiosity

Ice cream on a stick is a fun and practical way to enjoy ice cream, especially in the summer. In Italy, one of the most known variants of this dessert is the “Bolognese ice cream,” a kind of semifreddo on a stick that involves the use of whipped cream, icing sugar, and chocolate, often accompanied by a raspberry sauce or other fruit.
