Ice Cream Cookies
17/11/2023The recipe for ice cream cookies is a delicious pairing of cookies and ice cream, a variant that is much loved, especially in summer. In Italy, we might consider it as a reinterpretation of the classic ice cream cookie. Here’s a simple version you can make at home.
Ingredients
- 200g of 00 flour
- 100g of brown sugar
- 100g of butter at room temperature
- 1 large egg
- 1/2 teaspoon of baking soda
- 1 pinch of salt
- 1 teaspoon of vanilla extract
- 100g of chocolate chips
- Ice cream of your choice (vanilla, chocolate, stracciatella, etc.) for filling
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix the flour with the baking soda and salt.
- In another bowl, cream the butter with the sugar until you have a creamy mixture.
- Add the egg and vanilla extract to the butter and sugar mixture and continue to beat until it becomes homogeneous.
- Gradually incorporate the dry ingredients (the flour mixture) until you get a uniform dough.
- Stir in the chocolate chips and mix gently.
- Using a spoon, form balls of dough and place them on a baking tray lined with parchment paper, leaving a bit of space between each.
- Slightly flatten the balls to shape the cookies and bake for about 10-12 minutes or until the edges begin to brown.
- Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack until completely cooled.
- Once the cookies are cool, take a scoop of ice cream and place it on a cookie, then cover it with another cookie, pressing lightly to make them stick. Repeat the process for all the cookies.
- Place the ice cream cookies in the freezer for about 30 minutes before serving.
If you want to add an Italian touch, you could use quality artisan ice cream, perhaps hazelnut or pistachio flavor, both of which are highly appreciated in Italian ice cream parlors.
Trivia
The ice cream cookie has a very famous variation called “Chipwich,” introduced in New York in the late ’70s, and it immediately became a summer hit. The classic Chipwich consists of two chocolate chip cookies with vanilla ice cream in the middle, all rimmed with additional chocolate chips.
