Shortcrust Pastry Ice Cream Baskets

Here’s the recipe to create delicious shortcrust pastry baskets to be filled with ice cream. This is a classic pairing that brings a touch of elegance to any dessert.

Ingredients

  • 250 g of all-purpose flour
  • 125 g of cold butter, cubed
  • 100 g of powdered sugar
  • 1 large egg
  • 1 pinch of salt
  • 1/2 teaspoon of vanilla extract (optional)
  • Cream ice cream or your favorite flavor to fill

Preparation

  1. In a large bowl, sift the flour with the powdered sugar and a pinch of salt.
  2. Add the cold, cubed butter and work the mixture with your fingertips or a mixer until it has a sandy consistency.
  3. Make a well in the center and add the egg and the vanilla extract. Knead quickly until smooth.
  4. Shape a dough ball, wrap in clear film, and let it rest in the refrigerator for at least 30 minutes.
  5. Once the dough has rested, preheat the oven to 180°C and prepare the round basket molds or shapes you prefer.
  6. Roll out the shortcrust pastry on a lightly floured surface to a thickness of about 4-5 mm.
  7. Cut out circles of shortcrust pastry and line the previously buttered and floured molds, pressing them down to stick well to the walls.
  8. Prick the bottom with a fork and bake in the oven for about 15-20 minutes or until the baskets are golden.
  9. Let cool completely before gently removing the baskets from the molds.
  10. Once cool, fill the baskets with cream ice cream or your favorite flavor and serve immediately.
