The hot milk and coffee cake is a variant of the classic hot milk cake with the addition of a note of coffee that gives it an interesting touch of flavor and aroma. Here are the ingredients and the procedure to prepare it.

Ingredients

  • 3 eggs
  • 250 g of sugar
  • 1 sachet of vanillin or a teaspoon of vanilla extract
  • 250 g of all-purpose flour
  • 250 ml of whole milk
  • 100 g of butter
  • 1 sachet of baking powder
  • 2 tablespoons of instant coffee or a cold restricted espresso
  • A pinch of salt

Preparation

  1. Preheat the oven to 180°C and prepare a cake mold by buttering and flouring it, or lining it with parchment paper.
  2. In a large bowl, whisk the eggs with the sugar until you get a frothy and clear mixture. Add vanillin or vanilla extract while continuing to beat.
  3. Dissolve the coffee in the hot milk. Meanwhile, melt the butter and let it cool down.
  4. Incorporate the sifted flour with the baking powder into the mixture of eggs and sugar, mixing gently to avoid lumps.
  5. Gradually add the milk with the coffee and the melted butter, continuing to mix until a homogeneous dough is obtained.
  6. Pour the mixture into the prepared mold and bake in the oven for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  7. Let the hot milk and coffee cake cool before unmolding it, and if you wish, dust it with icing sugar before serving.

Curiosities
