Honey, Lemon, and Ginger Ciambella

Ingredients
- 300 g of all-purpose flour
- 100 g of sugar
- 3 eggs
- 100 ml of seed oil (for example, sunflower)
- 100 g of honey
- Grated zest of 1 lemon
- 1 teaspoon of freshly grated ginger
- 1 packet of baking powder
- A pinch of salt
- Icing sugar for garnishing (optional)
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
- Add the seed oil and continue to beat until it is completely incorporated.
- Mix in the honey, continuing to stir.
- Add the grated lemon zest and freshly grated ginger.
- Gradually combine the flour with the baking powder and pinch of salt, mixing until you obtain a smooth, lump-free batter.
- Butter and flour a ring cake mold, or line it with parchment paper.
- Pour the mixture into the mold and level the surface with a spatula or spoon.
- Bake for about 40 minutes, or until a toothpick inserted into the center of the ciambella comes out clean.
- Remove the ciambella from the oven and let it cool on a cooling rack.
- Before serving, if you wish, you can dust the ciambella with icing sugar for an additional touch of sweetness and decoration.
