Honey Cake

Honey cake is a delicious dessert that celebrates the rich and natural taste of honey. Below you will find the recipe to prepare an Italian-style honey cake.

Ingredients

  • 200 g of all-purpose flour
  • 100 g of finely ground almonds
  • 150 g of honey (preferably acacia or wildflower for a more delicate flavor)
  • 3 eggs
  • 100 g of granulated sugar
  • 50 ml of extra virgin olive oil
  • Grated zest of 1 lemon
  • 1 packet of baking powder
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the flour with the ground almonds and baking powder. Add a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  4. Add the honey to the egg and sugar mixture and mix well.
  5. Incorporate the extra virgin olive oil and the grated lemon zest.
  6. Combine the dry ingredients (flour, almonds, baking powder) with the wet mixture and mix gently until the dough is smooth.
  7. Pour the dough into a previously buttered and floured cake pan, or lined with parchment paper.
  8. Bake the honey cake for about 30-35 minutes. Perform the toothpick test to check the doneness: insert a toothpick in the center of the cake, if it comes out clean, the cake is done.
  9. Remove the cake from the oven and let it cool before unmolding. If desired, you can dust the surface with powdered sugar before serving.
