Honey Cookies

Ingredients
- 300g of all-purpose flour
- 100g of butter at room temperature
- 80g of granulated sugar
- 100g of honey, preferably wildflower for a more neutral taste
- 1 large egg
- 1 teaspoon of baking powder
- A pinch of salt
- 1 teaspoon of vanilla extract (optional)
- Powdered sugar for garnishing (optional)
Preparation
- In a large bowl, cream the butter with the granulated sugar until you have a creamy mixture.
- Add the egg and continue to work the mixture.
- Incorporate the honey and the vanilla extract if you’re using it.
- In a separate container, mix the flour with the baking powder and a pinch of salt.
- Gradually add the dry ingredients to the butter, sugar, and egg mixture, stirring until a homogeneous dough is formed.
- Shape the dough into a ball and wrap it in plastic wrap. Let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 180 °C.
- Roll out the dough on a floured surface until it is about 5mm thick.
- Cut out the cookies using molds of your choice.
- Place the cookies on a baking sheet lined with parchment paper, leaving some space in between.
- Bake in the oven for about 10-12 minutes or until the cookies are lightly golden.
- Allow the cookies to cool on a wire rack before serving. If desired, dust them with powdered sugar before serving.
