Honey Cookies

Here is the recipe for delicious honey cookies:

Ingredients

  • 300g of all-purpose flour
  • 100g of butter at room temperature
  • 80g of granulated sugar
  • 100g of honey, preferably wildflower for a more neutral taste
  • 1 large egg
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 1 teaspoon of vanilla extract (optional)
  • Powdered sugar for garnishing (optional)

Preparation

  1. In a large bowl, cream the butter with the granulated sugar until you have a creamy mixture.
  2. Add the egg and continue to work the mixture.
  3. Incorporate the honey and the vanilla extract if you’re using it.
  4. In a separate container, mix the flour with the baking powder and a pinch of salt.
  5. Gradually add the dry ingredients to the butter, sugar, and egg mixture, stirring until a homogeneous dough is formed.
  6. Shape the dough into a ball and wrap it in plastic wrap. Let it rest in the refrigerator for at least 30 minutes.
  7. Preheat the oven to 180 °C.
  8. Roll out the dough on a floured surface until it is about 5mm thick.
  9. Cut out the cookies using molds of your choice.
  10. Place the cookies on a baking sheet lined with parchment paper, leaving some space in between.
  11. Bake in the oven for about 10-12 minutes or until the cookies are lightly golden.
  12. Allow the cookies to cool on a wire rack before serving. If desired, dust them with powdered sugar before serving.
