Homemade Sofficini

Homemade Sofficini are a delicious alternative to classic frozen ones, and you can stuff them with your favorite ingredients. Here is a basic recipe for Sofficini:

Ingredients

  • 250 ml of milk
  • 150 g of flour
  • 50 g of butter
  • 2 egg yolks
  • Salt to taste
  • Nutmeg to taste
  • Ingredients for the filling of your choice (e.g. cooked ham and mozzarella, spinach and ricotta, etc.)
  • Flour, beaten eggs, and breadcrumbs for breading
  • Oil for frying

Preparation

  1. In a pot, melt the butter over medium heat. Add the flour and stir until you obtain a smooth mixture (this is the roux).

  2. Slowly pour in the cold milk, continuing to stir to avoid lumps. Cook over low heat until you have a very thick béchamel sauce.

  3. Season the béchamel with salt and nutmeg and incorporate the egg yolks, mixing well.

  4. Spread the mixture on a lightly floured surface, forming a layer about 3-5 mm thick. Let it cool completely.

  5. In the meantime, prepare the filling of your choice by mixing the ingredients.

  6. Cut circles or squares from the cooled mixture and place a bit of the filling in the center of each one.

  7. Close the Sofficini by pinching the edges to seal them well.

  8. Dredge each Sofficino first in flour, then in beaten eggs, and finally in breadcrumbs, making sure to cover them evenly.

  9. In a large pan, heat plenty of oil and fry the Sofficini until they become golden and crispy.

  10. Drain them on paper towels to remove excess oil.
