Homemade snack cakes for children

Homemade snack cakes can be a delicious and healthier choice compared to industrial ones. Here I propose a simple recipe to make soft and tasty cocoa snack cakes.

Ingredients

  • 150 g of flour 00
  • 30 g of cocoa powder
  • 130 g of granulated sugar
  • 100 ml of whole milk
  • 80 ml of seed oil
  • 2 eggs
  • 1 sachet of baking powder for sweets
  • 1 pinch of salt
  • Vanillin or vanilla extract (optional)

For the filling:

  • 100 g of hazelnut cream
  • Or alternatively, a jam of your choice

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin mold by oiling it or using paper liners.
  2. In a bowl, sift together the flour, cocoa, baking powder, and a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until they become light and fluffy. Add the oil, milk, and, if you like, a bit of vanillin or vanilla extract.
  4. Incorporate the dry ingredients into the egg and sugar mixture, mixing gently to avoid deflating the batter.
  5. Pour the mixture into the muffin molds, filling them about 2/3 full.
  6. Bake in the oven for about 20 minutes or until a toothpick inserted in the center of a snack cake comes out clean.
  7. Let the snack cakes cool on a wire rack.
  8. Once cooled, use a pastry syringe or a piping bag to inject a bit of hazelnut cream or jam into the center of each snack cake.

Not only can you choose the type of flour (whole wheat, rice, etc.) to vary the nutritional profile, but you can also play with different fillings and toppings, such as melted chocolate, chopped nuts, or colored sugar, to make each snack cake unique and suited to your children’s tastes.
