Homemade Red Mini Pizzas from the Oven

Here is a simple and tasty recipe to make red mini pizzas from the oven at home:

Ingredients

  • 500 g of type 00 flour
  • 250 ml of lukewarm water
  • 7 g of dry yeast (or 15 g of fresh yeast)
  • 1 teaspoon of sugar
  • 2 teaspoons of salt
  • 2 tablespoons of extra virgin olive oil
  • As needed tomato sauce
  • As needed oregano
  • Diced mozzarella or as needed grated cheese
  • As needed salt
  • As needed extra virgin olive oil for dressing

Preparation

  1. In a large bowl, dissolve the yeast and sugar in the lukewarm water and let it rest for about 5 minutes, until foam starts to form on the surface.
  2. In another bowl, mix the flour with the salt. Make a well in the center and pour in the activated yeast and extra virgin olive oil.
  3. Start mixing with a spoon, then transfer the dough onto a floured surface and knead with your hands until smooth and elastic, for about 10 minutes.
  4. Put the dough in an oiled bowl, cover with a damp cloth or plastic film and let it rise in a warm place until it doubles in volume, which should take about 1-2 hours.
  5. Once the dough has risen, take it and divide it into small balls the size you desire for the mini pizzas.
  6. Roll out each ball on a floured surface until you get discs about 0.5 cm thick.
  7. Arrange them on baking sheets lined with parchment paper, leaving a little space between each one.
  8. Spread a spoonful of tomato sauce on each disc, leaving a free edge all around.
  9. Season each mini pizza with a pinch of salt, oregano, and a drizzle of extra virgin olive oil.
  10. Scatter the diced mozzarella or grated cheese over the tomato sauce.
  11. Let the dressed mini pizzas rise for another 15-20 minutes while you preheat the oven to 220 °C.
  12. Bake the mini pizzas for about 10-15 minutes or until they are golden and the cheese is well melted.
  13. Take the mini pizzas out of the oven and serve them hot.
