Homemade Kebab

  • Salt and pepper to taste

  • 1 lemon
  • Piadinas, pita bread, or wraps

For the side dish:

  • Green salad, tomatoes, onions
  • Greek yogurt
  • Fresh mint leaves (optional for an Italian variant)

Preparation

  1. Begin by chopping the meat very finely or asking your butcher to do it.
  2. Chop the onion and garlic and mix them with the meat.
  3. Add cumin, coriander, paprika, chili, salt, pepper, and a drizzle of extra virgin olive oil.
  4. Work everything until you get a homogeneous mixture. Cover and let marinate in the refrigerator for at least a couple of hours, better if overnight.
  5. Shape the meat mixture into a cylinder and thread it onto a long skewer. If you don’t have a rotisserie, you can cook the meat in the oven: place it on a grill with a pan underneath to collect the fats.
  6. Cook the meat cylinder in a preheated oven at 200 °C for about 30-40 minutes, turning it occasionally, until it is well browned.
  7. While the meat is in the oven, prepare the salad by slicing the green salad, tomatoes, and onions thinly. If desired, you can add some mint leaves for a fresh touch.
  8. Prepare a yogurt sauce by mixing Greek yogurt with a bit of lemon juice, salt, pepper, and chopped mint leaves.
  9. Once the meat is cooked, cut it into thin strips.
  10. Gently heat the chosen piadinas or bread.
  11. Arrange the meat strips on the chosen dough, add the salad, and dress with the yogurt sauce.
  12. Wrap everything up and serve the kebab while still warm.
