Ingredients
- 6 fresh eggs
- 200 g of mixed herbs (spinach, chard, parsley, etc.)
- 2 cloves of garlic
- 4 tablespoons of grated Parmesan cheese
- Salt and pepper to taste
- Extra virgin olive oil

Clean and wash the selected herbs, then briefly cook them in a pan with a drizzle of oil and the garlic cloves. If using spinach or chard, remember to squeeze them well after cooking to eliminate excess water.

In a large bowl, beat the eggs with salt and pepper. Add the chopped herbs and Parmesan, mixing well to combine the ingredients.

Remove the garlic cloves from the cooked herbs, and in a non-stick frying pan, heat a drizzle of oil. Pour in the mixture of eggs and herbs and let it cook over medium-low heat.

When the edges of the frittata start to detach from the pan and the mixture begins to set, use a lid or a large plate to flip the frittata and cook it on the other side.
