Panfocaccia with Herbs and Provola

- 500 g of type 00 flour

- 10 g of salt

- 200 g of greens (or spinach or chard) already cleaned and chopped

Preparation
- In a large bowl, mix the flour with the sugar, salt, and dry yeast (if you are using fresh yeast, you should first dissolve it in the lukewarm water).
- Add the lukewarm water and extra-virgin olive oil, knead until you get a homogenous and smooth dough.
- Let the dough rise in a warm place, covered with a damp cloth, until it doubles in volume, about 1-2 hours.
- Meanwhile, cook the greens in boiling salted water for a few minutes, then drain and squeeze them to eliminate excess water. If you wish, you can sauté the minced garlic in a little extra-virgin olive oil as a flavor base for the greens, adding an extra touch of flavor.
- Stretch the risen dough with your hands or a rolling pin, forming a rectangle on a baking sheet lined with parchment paper.
- Evenly distribute the cubed provola and the greens on the dough’s surface, adjusting salt and pepper to taste.
- Let it rise again for another 20-30 minutes.
- Preheat the oven to 200 °C.
- Before baking, brush the surface with some extra-virgin olive oil.
- Bake in the preheated oven for 20-25 minutes or until the Panfocaccia is golden and crispy.
- Take out of the oven and let it cool down a bit before serving.
