Aromatic Herb Rolls
17/11/2023Here’s a recipe for making aromatic herb rolls, ideal for adding an extra touch of flavor to your meals or to accompany an aperitif.
Ingredients
- 500 g of type 0 or type 1 flour
- 300 ml of lukewarm water
- 10 g of fresh brewer’s yeast or 3 g of dry brewer’s yeast
- 1 teaspoon of sugar
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of salt
- A mix of chopped fresh aromatic herbs (for example: rosemary, thyme, oregano, sage) to taste
- Optional: a pinch of black pepper or chili pepper for a spicier taste
Preparation

In a large bowl, dissolve the fresh (or dry) brewer’s yeast in lukewarm water with the sugar. Let it rest for a few minutes until small bubbles form on the surface, indicating that the yeast is active.

Add the sifted flour, extra virgin olive oil, salt, and chopped aromatic herbs to the water and yeast mixture. Start kneading until you obtain a homogeneous and not too sticky dough. If necessary, add a bit of flour or water.

Transfer the dough to a floured surface and continue to work it for about 10 minutes, until it becomes smooth and elastic.

Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap and let it rise in a warm place for about 1-2 hours or until it has doubled in volume.

After proving, take the dough and divide it into pieces of the desired size depending on the size of the rolls you want to obtain.

Shape the rolls into round or elongated shapes and place them on a baking tray lined with parchment paper, leaving space between each one.

Cover the rolls with a cloth and let them rise again for about 30-40 minutes.

In the meantime, preheat the oven to 200 °C.

Before baking, gently brush the surface of the rolls with a bit of water or with an emulsion of water and oil, and sprinkle them with some aromatic herbs.

Bake the rolls for about 15-20 minutes or until they are golden brown.

Remove the rolls from the oven and let them cool on a wire rack before serving.
