Chicken with Herbs and Mushrooms
17/11/2023Here is an Italian version of the classic chicken with herbs and mushrooms dish. Remember to have all the necessary ingredients before starting.
Ingredients
- 4 chicken breasts
- 300 g of mushrooms (champignons or porcini for a more intense flavor)
- 2 cloves of garlic
- 1 sprig of rosemary
- Some sage leaves
- 1 handful of fresh parsley
- 150 ml of chicken broth
- 60 ml of dry white wine
- Extra virgin olive oil
- Salt and pepper to taste
- Flour, as needed for dusting the chicken
Preparazione
- Clean and slice the mushrooms. Finely chop the garlic, rosemary, sage, and parsley.
- Lightly flour the chicken breasts on both sides. This will help to create a golden crust and thicken the sauce slightly.
- In a large skillet, heat the extra virgin olive oil and sauté the chicken breasts until they turn golden on both sides. Remove them and set them aside.
- In the same skillet, add a drizzle of oil if necessary and sauté the chopped garlic with the herbs until aromatic.
- Add the mushrooms and sauté until they are well browned. Season with salt and pepper.
- Deglaze with the white wine and let the alcohol evaporate.
- Return the chicken to the skillet with the mushrooms and add the chicken broth.
- Cook over medium-low heat, covered, for about 20 minutes or until the chicken is cooked through and the sauce has slightly reduced.
- At the end of cooking, adjust the seasoning with salt and pepper and sprinkle with chopped fresh parsley.
Curiosity
This dish pairs perfectly with a side of roasted potatoes or soft polenta, creating a comforting and flavor-rich meal. In northern Italy, in particular, the use of rosemary and porcini mushrooms is very common and appreciated, as the woods offer these products in abundance.
Serve the chicken with herbs and mushrooms hot, and if you like, accompany it with a glass of the same variety of white wine used for cooking.
