Hazelnut Tart with Fig Jam

Ingredients
For the hazelnut shortcrust pastry:
- 200 g of all-purpose flour
- 100 g of finely ground hazelnuts
- 100 g of sugar
- 100 g of cold butter, diced
- 1 large egg
- A pinch of salt
For the filling:
- Fig jam, about 300 g
To decorate:
- Whole or halved hazelnuts to decorate
- Icing sugar (optional)
Preparation

Start by preparing the hazelnut shortcrust pastry. In a large bowl, mix the flour with the ground hazelnuts, sugar, and a pinch of salt. Add the cold, diced butter and start to knead with your fingertips until you get a sandy mixture.

Add the egg and quickly work the dough until it forms a smooth ball. Wrap the pastry in cling film and let it rest in the refrigerator for at least 30 minutes.

In the meantime, preheat the oven to 180°C (356°F).

Roll out the pastry with a rolling pin on a lightly floured surface to a thickness of about 5 mm. Carefully transfer the dough to a previously buttered and floured tart pan, ensuring to line the bottom and sides well.

Pour the fig jam over the tart base and level it with a spatula or spoon.

If you like, you can decorate the surface of the tart with whole or halved hazelnuts, pressing them lightly into the jam.

Bake the tart for 30-35 minutes or until the edges are golden and the jam is slightly caramelized.

Remove the tart from the oven and let it cool before dusting with icing sugar, if desired.
