Hazelnut Tart

The hazelnut tart is a rich and delicious treat. Here’s the recipe:

Ingredients

  • 300 g of all-purpose flour
  • 150 g of cold butter, cut into pieces
  • 150 g of sugar
  • 1 large egg
  • 1 egg yolk
  • A pinch of salt
  • Grated zest of 1 untreated lemon

For the filling:

  • 200 g of toasted and chopped hazelnuts
  • 100 g of sugar
  • 2 eggs
  • 100 ml of fresh cream

Preparation

  1. Start by preparing the shortcrust pastry: in a bowl, mix the flour with the sugar, a pinch of salt, and lemon zest.
  2. Add the cold butter pieces and start to quickly work the mixture with your fingers until it has the consistency of coarse sand.
  3. Make a well and add the whole egg and the yolk. Work the dough quickly until it forms a compact ball. Wrap the dough ball in cling film and let it rest in the refrigerator for at least 30 minutes.
  4. Prepare the filling: in another bowl, mix the chopped hazelnuts with the sugar, add the eggs and the fresh cream. Stir to obtain a homogeneous mixture.
  5. Heat the oven to 180 °C (356 °F).
  6. Roll out the shortcrust pastry into a uniform layer and lay it in a tart pan (preferably with a removable bottom), previously buttered and floured. Create high edges.
  7. Prick the bottom of the shortcrust pastry with a fork, then pour the hazelnut mixture into the base of the tart.
  8. Bake in the oven for about 30-35 minutes, or until the tart is golden brown.
  9. Allow to cool completely before serving.
