Hazelnut Muffins

Ingredients

  • 200 g of all-purpose flour
  • 100 g of finely chopped hazelnuts
  • 150 g of granulated sugar
  • 100 ml of milk
  • 80 ml of seed oil or melted butter
  • 2 large eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • (Optional) a bit of vanilla extract to enrich the aroma

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tray by lining the recesses with paper liners.
  2. In a bowl, sift the flour with the baking powder and the pinch of salt.
  3. In another bowl, beat the eggs with the sugar until they become light and fluffy. This process promotes the softness of the muffins.
  4. Add the milk, seed oil or melted butter (according to preference), and, if desired, a bit of vanilla extract for an extra touch of flavor. Mix everything well.
  5. Gradually incorporate the sifted flour mixture into the liquid mixture, stirring carefully to avoid lumps.
  6. Add the chopped hazelnuts to the batter and gently mix until you have a homogeneous mixture.
  7. Fill the paper liners three-quarters full with the batter, to allow the muffins to rise during baking.
  8. Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  9. Once baked, remove the muffins from the oven and let them cool on a wire rack.
