Hazelnut Muffins

Ingredients
- 200 g of all-purpose flour
- 100 g of finely chopped hazelnuts
- 150 g of granulated sugar
- 100 ml of milk
- 80 ml of seed oil or melted butter
- 2 large eggs
- 1 sachet of baking powder
- 1 pinch of salt
- (Optional) a bit of vanilla extract to enrich the aroma
Preparation
- Preheat the oven to 180 °C and prepare a muffin tray by lining the recesses with paper liners.
- In a bowl, sift the flour with the baking powder and the pinch of salt.
- In another bowl, beat the eggs with the sugar until they become light and fluffy. This process promotes the softness of the muffins.
- Add the milk, seed oil or melted butter (according to preference), and, if desired, a bit of vanilla extract for an extra touch of flavor. Mix everything well.
- Gradually incorporate the sifted flour mixture into the liquid mixture, stirring carefully to avoid lumps.
- Add the chopped hazelnuts to the batter and gently mix until you have a homogeneous mixture.
- Fill the paper liners three-quarters full with the batter, to allow the muffins to rise during baking.
- Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
- Once baked, remove the muffins from the oven and let them cool on a wire rack.
Curiosity
Muffins, sweet treats originating from England, have also become very popular in Italy. By adding hazelnuts, a typical fruit of the Piedmont region, these little cakes acquire a rich taste and irresistible crunchiness.
