Hazelnut Mousse

Ingredients
- 150 g of roasted hazelnuts
- 100 g of sugar
- 3 egg yolks
- 200 ml of whipping cream
- 50 g of butter
- 2 sheets of gelatin (or 4 g of gelatin powder)
- 50 ml of milk
Preparation
- Begin by toasting the hazelnuts in the oven or in a pan to enhance their flavor. Let them cool down and then finely chop them in a mixer or food processor.
- Put the gelatin sheets in a bowl full of cold water to hydrate them for about 10 minutes (if using powdered gelatin, follow the package instructions for hydration).
- Dissolve the sugar with a little water in a saucepan and bring to a boil until you get a syrup. Allow to cool slightly.
- In a small bowl, beat the egg yolks. Gradually add the sugar syrup to the egg yolks, continuing to whisk until you get a light and fluffy mixture.
- Melt the squeezed gelatin in the warm milk and incorporate it into the egg and sugar mixture.
- Add the chopped hazelnuts and melted butter and mix well to obtain a homogeneous mixture.
- Whip the cream until it’s fluffy and gently fold it into the hazelnut mixture, being careful not to deflate it.
- Pour the mousse into small cups or in a single container and let it rest in the refrigerator for at least 4 hours before serving so that it sets well.
