Ham and Cheese Crepes

Ingredients

  • 125 g of flour
  • 250 ml of milk
  • 2 eggs
  • 1 pinch of salt
  • 30 g of melted butter (plus some more for greasing the pan)
  • Cooked ham, sliced
  • Cheese slices (for example, Emmentaler, Fontina, or Asiago)
  • Grated cheese (optional, for gratinating)

Preparation

  1. In a bowl, sift the flour and add a pinch of salt.
  2. In another bowl, beat the eggs and add them to the milk.
  3. Gradually pour the milk and egg mixture into the flour, stirring constantly to avoid lumps. Add the melted butter and continue stirring until you obtain a smooth and homogeneous batter. Let the batter rest for about 30 minutes.
  4. Heat a non-stick pan and lightly grease it with some butter.
  5. Pour enough batter to cover the bottom of the pan, moving it around to spread it evenly.
  6. Cook the crêpe on one side until it becomes golden, then flip it and cook the other side.
  7. Once the crêpe is ready, place slices of cheese and cooked ham on one half; fold the other half over the filling and press lightly.
  8. Leave it in the pan for a moment so that the cheese melts. For a crunchier touch, you can sprinkle some grated cheese on top of the crêpe and briefly place it under the oven grill to gratinate.
  9. Repeat the process for the remaining crêpes.

Serve the ham and cheese crêpes hot, perhaps accompanied by a fresh green salad.
