Mezze maniche with tuna

Mezze maniche with tuna is a simple yet flavorful dish, perfect for a quick lunch or a light dinner. Here is the recipe:

Ingredients

  • 320 g of mezze maniche (or another type of short pasta)
  • 200 g of oil-packed tuna, drained
  • 2 cloves of garlic
  • 200 g of cherry tomatoes
  • Chopped fresh parsley
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil

Preparation

  1. Put a large pot of salted water on to boil for the pasta.
  2. In the meantime, in a large skillet heat a drizzle of extra virgin olive oil and lightly fry the crushed garlic cloves.
  3. Add the cherry tomatoes cut in halves or quarters and cook over medium heat for about 5 minutes.
  4. Add the drained tuna, flake it with a fork, and let it flavor for another 2-3 minutes, being careful not to dry out the sauce too much.
  5. When the water boils, cook the mezze maniche according to the package instructions to get al dente pasta.
  6. Drain the pasta, reserving a ladle of the cooking water, and pour it into the skillet with the tuna sauce.
  7. Mix well to flavor the pasta, adding a bit of the cooking water if necessary to make the sauce creamier.
  8. Sprinkle with chopped fresh parsley, adjust with salt and pepper, and serve immediately.
