Hake in Sparkling Wine

Hake in sparkling wine is an elegant dish that combines the delicate flavor of fish with the sparkling note of sparkling wine. Follow this recipe:

Ingredients

  • 4 hake fillets (about 150-200 g each)
  • 200 ml of sparkling wine
  • 1 small white onion
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • Salt to taste
  • Pepper to taste
  • Chopped parsley (optional, to garnish)

Preparation

  1. First, preheat the oven to 180 °C.
  2. Clean the hake fillets, ensuring there are no bones, and gently pat them dry with paper towels to remove excess moisture.
  3. Finely slice the onion and sauté it in a pan with the oil and garlic until it becomes translucent.
  4. Once the onion has softened, add the hake fillets to the pan. Cook for about 2 minutes per side.
  5. Deglaze with sparkling wine, increase the heat to allow the alcohol to evaporate.
  6. Season with salt and pepper, then cover the pan with a lid and let it cook for another 5 minutes or so, depending on the thickness of the hake fillets.
  7. Place the hake fillets in a baking dish, and then pour over the cooking liquid with the onion.
  8. Bake in the center of the oven for about 10-15 minutes.
  9. Serve immediately after removing it from the oven, garnishing with fresh chopped parsley if desired.

Curiosity

Hake is a lean fish and very versatile in the kitchen; sparkling wine is used in cooking mainly for its ability to impart a unique aroma and slight acidity to dishes, especially with seafood and fish. Always remember to choose a good quality sparkling wine, as it will significantly influence the final flavor of the dish.
