Grilled Salmon with Couscous Salad

Preparing grilled salmon with a couscous salad is a great idea for a light yet tasty meal. Here is the recipe and the procedure.

Ingredients

For the salmon:

  • 4 fresh salmon fillets
  • Extra virgin olive oil
  • Salt and pepper to taste

For the couscous salad:

  • 200 g of couscous
  • 250 ml of vegetable broth or water
  • 1 cucumber
  • 2 ripe tomatoes
  • 1 small red onion
  • A handful of pitted black olives
  • 1 lemon (juice and grated zest)
  • A bunch of fresh parsley
  • A bunch of fresh mint
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation

  1. Start by preparing the couscous. Bring the vegetable broth or water to a boil, turn off the heat, and pour in the couscous. Cover and let it rest for about 5 minutes, until it has absorbed all the liquid. Fluff it with a fork.

  2. Meanwhile, wash and dice the tomatoes and cucumber, finely slice the red onion, chop the olives, and chop the herbs.

  3. Add the vegetables to the couscous, along with the lemon juice and zest. Season with salt, pepper, and plenty of extra virgin olive oil. Mix well and let it rest to allow the flavors to blend.

  4. Prepare the salmon. Heat a grill or a non-stick pan. Lightly brush the salmon with extra virgin olive oil and season with salt and pepper.

  5. Grill the salmon fillets for about 3-4 minutes on each side, depending on the thickness, until they are well browned on the outside and still slightly moist on the inside.

  6. Serve the salmon accompanied by the fresh couscous salad.
