Grilled Fish with Skyr and Avocado Sauce

Here is the recipe for preparing this dish, with an Italian touch in the sauce thanks to the use of aromatic herbs like basil or parsley, which pair well with both the fish and the skyr.
Ingredients
- Choice fish fillets (sea bass, gilt-head bream, salmon, etc.) for each person
- Salt and pepper to taste
- Lemon juice
- Extra virgin olive oil
- 1 ripe avocado
- 150 g of skyr (you can also use Greek yogurt if you can’t find skyr)
- A bunch of fresh aromatic herbs (basil or parsley)
- 1 clove garlic
- 1 fresh chili pepper (optional)
Preparation
- Start by heating the grill to medium-high temperature. Meanwhile, you can season the fish fillets with salt, pepper and a bit of lemon juice.
- Once the grill is hot, brush the fish with a drizzle of extra virgin olive oil and place it on the grill. Cook the fish for about 3-4 minutes on each side, depending on the thickness of the fillets. The fish is ready when it flakes easily with a fork but is still moist inside.
- For the sauce, cut the avocado in half, remove the pit and scoop out the flesh with a spoon. Place the avocado in a bowl and mash it with a fork to a cream.
- Add the skyr to the avocado and mix until smooth.
- Finely chop the aromatic herbs, garlic, and if desired, the chili pepper. Add them to the bowl with the avocado and skyr cream, season with salt and pepper, and mix well.
- Serve the hot fish fillets with a generous dollop of skyr and avocado sauce on the side or on top of the fish.

Skyr is a dairy product from Iceland, similar to yogurt but with a creamier texture and a more delicate taste. It is protein-rich and low in fat, making it a great ally for those following low-calorie or balanced diets.
If you don’t have skyr, you can easily use Greek yogurt, which has a similar consistency and is well suited for making cold sauces. Remember that the aromatic herbs can be adapted based on your tastes and what you have available.
