Green Tea Biscuits

Ingredients

  • 2 tablespoons of green tea powder (matcha)
  • 110 grams of unsalted butter, at room temperature
  • 100 grams of powdered sugar
  • 1 large egg
  • 150 grams of 00 flour
  • 50 grams of almond flour
  • A pinch of salt

Preparation

  1. Preheat the oven to 175 °C and prepare a baking sheet by lining it with parchment paper.
  2. In the bowl of a stand mixer or using a hand mixer, cream together the butter and powdered sugar until light and fluffy.
  3. Add the egg and continue beating until well incorporated.
  4. In a separate bowl, sift together the 00 flour, almond flour, green tea powder, and a pinch of salt.
  5. Add the dry ingredients to the butter, egg, and sugar mixture, and mix until the dough is uniform.
  6. Form small sticks or balls of dough and place them on the prepared baking sheet, leaving some space between them as they will spread during baking.
  7. Bake for about 12-15 minutes, or until the edges just start to turn golden brown.
  8. Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.
