Green Tagliatelle alla Bolognese

Ingredients

  • 400 g of green tagliatelle (spinach)

Ingredients for the Bolognese Ragu:

  • 300 g of ground beef
  • 100 g of minced pancetta
  • 50 g of celery, finely chopped
  • 50 g of carrot, finely chopped
  • 50 g of onion, finely chopped
  • 400 g of tomato pulp or chopped peeled tomatoes
  • 1/2 glass of red wine
  • 200 ml of meat broth
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Milk, a touch (optional)

Preparation of the Ragu:

  1. In a large saucepan, fry the minced pancetta in a little extra virgin olive oil until it is crispy.

  2. Add the ground beef and sauté until it crumbles.

  3. Add the celery, carrot, and onion and continue to cook until the vegetables soften.

  4. Deglaze with the red wine and let the alcohol evaporate.

  5. Add the tomatoes, a pinch of salt and pepper. Simmer for at least 2 hours, occasionally adding some broth and a dash of milk if using.

Preparation of the Tagliatelle:

  1. Cook the green tagliatelle in plenty of boiling salted water until al dente as per the instructions on the package.

  2. Drain the pasta while keeping a bit of the cooking water and transfer it into the saucepan with the ragu.

  3. Mix well to flavor every tagliatelle.
