Green Potatoes

Ingredients

  • 1 kg of potatoes
  • 2 bunches of fresh parsley
  • 2 cloves of garlic
  • 4 tablespoons of extra virgin olive oil

  • Pepper to taste

Preparation

  1. Start by washing the potatoes well and, if you prefer, peel them. Cut them into similarly sized cubes to ensure even cooking.
  2. Put the potatoes in a pot with salted water and bring to a boil. Let them cook until they are tender but still firm, then drain them and let them cool slightly.
  3. Meanwhile, wash the parsley, dry it and chop it finely together with the garlic cloves.
  4. In a large skillet, heat the extra virgin olive oil and add the potatoes, sautéing them until they are golden and crispy.
  5. Just before finishing cooking, add the chopped parsley and garlic and mix well to evenly season the potatoes.
  6. Season with salt and pepper, and if you like, add some lemon juice to provide a fresh acidity to the dish.
  7. Serve the green potatoes hot as a side to other dishes.
