Prawns with Green Pepper
17/11/2023Prawns with green pepper is an elegant and tasty dish that blends the sweetness of prawns with the spiciness of green pepper. Here’s how to prepare them:
Ingredients
- 12 fresh and peeled prawns
- 1 tablespoon of green peppercorns
- 2 tablespoons of brandy
- 200 ml of fresh cream
- 2 cloves of garlic
- Extra virgin olive oil (as needed)
- Salt (as needed)
- Fresh chopped parsley (for garnish)
Preparation
- Start by cleaning the prawns, removing the shell and the intestine, then rinse them under running water and pat dry with kitchen paper.
- In a large pan, heat a drizzle of extra virgin olive oil and add the whole garlic cloves.
- As soon as the garlic turns golden, remove it and add the prawns. Sauté the prawns over high heat for about 1-2 minutes per side.
- Deglaze the prawns with brandy and let it evaporate on high heat.
- Add the green peppercorns, previously slightly crushed with the flat side of a knife, to release their aroma.
- Lower the heat and pour in the fresh cream. Season with salt and cook for another 2-3 minutes, until the sauce has slightly thickened.
- Serve the hot prawns with green pepper, garnished with some freshly chopped parsley to add color and freshness.

Green pepper has a less pungent and fresher flavor compared to black pepper, and it goes very well with creamy meat and fish dishes like this one. In Italy, green pepper is common in meat sauce preparations, such as the famous “bistecca al pepe verde” (steak with green pepper), but in this case, we have created a variation with seafood, a non-traditional pairing that is much appreciated for its unique flavor.
