Tonnato Turkey

Tonnato Turkey is a variation of the more famous “Vitello Tonnato,” a dish that combines turkey meat with a creamy tuna-based sauce. It is a fresh and flavorful dish, perfect for summer.

Ingredients

  • 500 g of turkey breast
  • 200 g of canned tuna
  • 3-4 salted anchovies
  • 2 egg yolks
  • 150-200 ml of extra virgin olive oil
  • 1-2 tablespoons of salted capers
  • Juice of half a lemon
  • Meat or vegetable broth
  • Salt and pepper to taste

Preparation

  1. First of all, cook the turkey breast. It can be boiled in broth or steamed. If you choose to boil, bring the broth to a boil and immerse the turkey in it, cooking for about 30-40 minutes or until the meat is tender. Let the meat cool in its broth to keep it soft.

  2. While the turkey is cooling, prepare the tonnato sauce: start by draining the oil from the tuna and place it in a blender. Add the egg yolks, well-rinsed capers, and anchovies after desalting and deboning them.

  3. Blend all the ingredients, gradually adding the extra virgin olive oil until you have a smooth and creamy sauce. Season with salt and pepper and add the lemon juice to balance the flavors.

  4. Slice the cooled turkey into slices about half a centimeter thick.

  5. Arrange the slices of turkey on a serving dish and cover them with the tonnato sauce. Decorate the dish with some whole capers or slices of lemon.

  6. Let the Tonnato Turkey rest in the refrigerator for at least one hour before serving, so that the flavors combine well.
